Attempting 'Healthy' Millionaire Shortbread

WARNING!
SERIOUSLY ADDICTIVE. YOU WILL EAT THEM ALL IN ONE GO UNLESS YOU HAVE BETTER WILL POWER THAN ME (which is likely).
First off why am I attempting such a non conventional bake...
In January my eczema was out of control. It was an absolute pain in the beeehind. I went to a clinic to see if there was anything i could do in terms of my diet and it was quite the eye opener. She did some tests and told be i was intolerant to cows milk, wheat AND eggs. EGGS ARE MY FAVOURITE THINGS EVER. It was quite sad. So I don't stick religiously to this 'free from' diet and sometimes when my skin gets bad i have to return to the land of near veganism. I praise vegans as it is HARD. Although is still eat meat so not exactly living the full vegan life. However I love cooking and baking and am always intrigued about making my favourite things sans the guilty ingredients that my body disagrees with. I first hear about the recipe for these on Amilia Liana's YouTube page:
I love Amelia she cracks me up and is one hella beautiful lady. She recommended an app called Hippy Lane which is basically a mini recipe book for lots more recipes like this one. I downloaded it and went from there.
What you will need...
Ok this is where i may get a little ranty.
The ingredients ask for:
225g of Cashews (Yep ok fine) £2
40g of desiccated coconut (i can get that easy peasy) £1.50
150g plus 10 extra Mejool dates.
- This is where i was stumped. firstly it asks for them to be pitted and Tescos doesn't sell pitted ones but the ones they do sell are £2 for 10 dates. so you'd have to spend a fortune to have enough! Therefore i used normal pitted dates and i got more than enough for £2.
120ml plus 3tbsp of RICE MALT SYRUP
- Sorry what? I googled this and it is not a something stocked in supermarkets. Its basically a something the stick the base and add sweetness. I substituted this for some Black Strap Molasses £2 and some Honey which i already and in my cupboard.
125 ml of Almond Butter £3 - this actually tastes so good and i have a fair amount left over.
Vanilla powder - Amelia used Vanilla extract so i did too as i already had it.
Maple Syrup - this is for the chocolate but i used it in the caramel instead of the Rice Malt stuff. £3
Cacoa Powder - i just used some good quality dark coco powder that we already had.
Coconut Oil - I usually would have used this as i found this really cheap one in the world food section of my Tesco. But i had non left and Tesco were out of stock so instead of spending £5 on a normal tub i used olive oil we had at home.
If you were to buy the exact ingredients you would be spending around £20 but my version cost me around £13. Still quite pricey when your on a student budget though.
You can't make these unless you have a freezer and a food processor, but if you have these, it is simple pimple.
1. You blend the cashews, dates, coconuts and honey/ molasses until you can stick this together as the base layer in a greaseproof paper lined tray.

2. Put this in the freezer.

3. blend the rest of the dates, 60 ml oil, 125ml of almond butter (i used about 150ml), vanilla essence, a pinch of salt and maple syrup to make the caramel. It tastes so good and looks like caramel.
4. Spread this over your base and pop back in the freezer.
5. Chocolate time. Mix the coco powder, maple syrup and oil until you have a gloopy chocolatey mixture. Its runny but then spread this over the caramel and freeze again.
6. this is where i went wrong... LEAVE IT TO FREEZE! i didn't and it tastes ok, but eat it when its been frozen and it is YUMMMMMY.

There you have it Dairy Free, Gluten Free, Raw, Refined Sugar Free, and Vegan (apart from the honey) Caramel Shortbread.
Kind of on a student budget.
I asked a friend of mine who's a yogi healthy guru what the deal is with Mejool dates, aparently they are just a guaranteed squishy inside as sometimes normal dates can be hard. For now ill take my chances with normal dates and i will defiantly be making these again!
