My mum always tries to convince me flapjack is healthy as it is made with oats. Is that really a health thing? I guess they are full of fibre?? But the amount of butter and sugar in these flapjacks does not make them healthy, it does however make them taste delicious! So as a one off (or not so one off, i've eaten them everyday since making them, and for dinner last night) they make a fabulous munch.
YOU WILL NEED:
400g of porridge or other oats
150g of demerara sugar
50g of sultanas/ raisons
50g of soft or dried apricots, if whole chop them up
200g of Butter
5 table spoons of golden syrup
1 tea spoon of cinnamon
the zest of 1 orange grated finely
The good thing about this recipe is that your probably have all these ingredients already. no need to go sourcing some obscure rice malt syrup (see my vegan caramel shortbreads for this dilemma).
This recipes is also very simple to follow, i bakes it whilst watching Love Island (shock) i had to keep turning to wimbledon every time my dad walked in as i was ashamed. Not that there is anything wrong with Love Island?!
OK so METHOD:
Preheat oven to 170 (this is the heat for a fan oven, so about 190 for a normal one. Line a baking tray with grease proof paper.
1. Melt to butter in large pan, you will need a rather large one. Keep the heat low the whole time, don't let it burn
2. Whilst this was melting measure out the sugar, orange zest, and cinnamon
3. When thither butter is melted add the sugar, zest and cinnamon and then add the golden syrup
4. Keep string until the butter is melted
5. At this point DO NOT taste the mixture to see if the sugar is melted. Bad idea you WILL burn you tongue, take it form someone who nows.
6. When the mixture runs of the spoon without the grains of sugar showing take it off the heat.
7. Add the fruit and oats, as you can see my weighing scales are small so i measured 200g of oats at a time.
8. Mix this all together then pour into your baking tray and press it down a bit
9. Pop in the oven for 15 minutes, or until golden brown (what a classic bit of baking chat)
10. Take them out and wait for them to cool or they will crumble as soon as you try and cut them.
